Super hot chilli powder has a reputation. Most people think it’s just pain in a jar.

Truth is — when used properly, it’s pure flavour power.

At Wild West Chilli Co, we grow and mill our super hots in the South West of WA. From Carolina Reapers to Scorpions, these powders aren’t just heat. They carry deep fruity notes, smokiness, and serious character.

Here’s how to use them properly.

1ļøāƒ£ Start Small. Always.

Super hot powder is concentrated. You don’t sprinkle it — you measure it.

Start with:

  • 1/8 teaspoon for a family meal

  • A pinch for sauces

  • A light dusting for meat rubs

You can always add more. You can’t take it out.

2ļøāƒ£ Mix It Into Fat

Heat spreads better when blended with:

  • Oil

  • Butter

  • Mayo

  • BBQ sauce

Try mixing Carolina Reaper powder into melted butter for next-level wings.

3ļøāƒ£ Layer It, Don’t Dump It

Instead of adding all your heat at once:

  • Add mild chilli early

  • Add super hot powder near the end

This builds depth without overpowering flavour.

4ļøāƒ£ Use It in Dry Rubs

Super hots shine in:

  • Brisket rubs

  • Ribs

  • Steak seasoning

  • Taco mince

A small percentage of Reaper or Scorpion in a rub turns ordinary BBQ into competition-level fire.

5ļøāƒ£ Balance With Acid

Super heat loves:

  • Lime

  • Lemon

  • Vinegar

  • Tomato

Acid brightens flavour and controls burn.

Super hot chilli powder isn’t about pain. It’s about control.

Used right, it transforms food.

Used wrong… well, that’s on you.
